Chickpea Herb Salad

Chickpea Herb Salad (from vegweb.com)


4-6 plum tomatoes, chopped
1 cucumber, chopped
1 sweet red bell pepper, chopped
1 green bell pepper, chopped
1/2 medium red onion, finely chopped
2 cans chickpeas, drained and rinsed
1/4 cup finely chopped fresh taragon
1/8 cup finely chopped fresh basil
1/2 cup finely chopped fresh parsley
1/8 cup chopped chives

2 tablespoons hummus (garlic is nice!)
juice of 1 lemon
1 tablespoon liquid sweetener (agave nectar, simple syrup, etc.)
salt and pepper to taste (about 1/4 teaspoon of each)

Now that the weather is getting warm and beautiful, this is a nice, light summery recipe for the outdoor sunshine!

1. Chop the veggies, dice the herbs, and place with the chickpeas in a large bowl.
2. In a small bowl, whisk the hummus, lemon juice, liquid sweetener, salt and pepper together to form the dressing. Pour the dressing over the veggie mixture, stir, and enjoy!

This is a very versatile recipe, so you can mix up, replace, or add herbs or other veggies as you see fit. Now take a break from conference work, go outside and enjoy the weather!
